Deeds(escritura) seem to be different in Spain from the U.K. These are, as far as we have been told, kept by Central Govt. in Spain. We got a copy from our solicitor some months later. Hope this clarifies the situation.

It may depend on the notary, but as far as I am aware, the notary does not usually present the deed to the land registry. It is up to the purchaser (or their representative) to organise this. The original deed should be available form the notary within a week or so after signing, I think. I believe you have 30 days from signing in which to present the deeds to the registry.
So, to answer your question: notary - solicitor - registry.
