Before moving over here, I worked in and eventually owned Restaurants. You are quite wrong about the hygene issues of cooking the way the WOK in San Javier does it. The water is as you say Boiling and the wok itself is far in excess of temperatures achievable on a normal oven top. Chinese food is cooked in the same way in the UK (and indeed the rest of the world) just behind closed doors, just because you cant see it, doesnt mean it doesnt happen. It is probaably the safest way to eat food in Spain. A friend of mine got full blown Salmonella from a restaurant in Los Alcazaras in 2006 and was hospitalised. He now has a very weak stomach as he has been told he will always have the virus and any slight problem with food gives him problems. He eats in the San Javier WOK quite often and has never had a problem. Give it a try, it is the freshest ingredients, cooked with no MSG or preservatives. The best way to eat Chinese.
