Tourist Visa for Spain

I am British, my wife is Ukraine. We want to visit Spain and we are having problems getting a tourist visa.

Anyone can help with advise please. We plan on flying into Barcelona, hiring a car , then driving down coast looking at property for sale.

Embassy wants, reservations etc ,etc ...but we wanted to stay where and when we see a place, not book into a particular hotel in advance.

Do you live in the UK & does she have the 'indefinite leave to remain' stamp in her passport ? If she does then she can travel anywhere in the EU as a stamp in one EU country counts as a stamp in them all.

Thanks , but we live in Ukraine . She did get a tourist visitor visa last year , but that now expired.
