'Evening' classes

Given that the Spanish seem to spend most of the afternoon doing nothing, and work until later in the evening, when do they typically engage in language classes/aerobics and that kind of thing? Presumably those who are not working would attend any time of the day, but what about the workers?

Good question, and I'm not too sure to be honest, but I have a feeling that they would go for the after work hours, just as anyone else. But this means you may be holding some midnight Tai Chi classes soon! Late nights (or what we typically perceive to be late) don't phase the Spaniards (even for the kids), since they don't exactly rush to work on the morning!
