In the Fortuna area the following is true - this is Spain so I'm sure there will be local variations!
In the lead up to Christmas the large commercial centres are open on Sunday.
December 25 & 26 and January 6 are National holidays.
Most of the British owned resturants that are open on Christmas day require advanced bookings. Boxing day is a bit more hit and miss.

Dennis, Boxing Day isn't a public holiday in Spain. Supermarkets in our area opened.

We picked up a freebie calendar from Cambank  before xmas & Dec 26th is down as a normal working day & our Lidl's & Mercadona were open. That's Guardamar.

In Vera, Almeria supermarkets etc were open on the 26th December.

Do be aware that the supermarkets close around mid-day on Christmas Eve.

Also, if you are stayong beyond New Year, January 6th is a Public Holiday & nothing is open.
