Susana Griso (Presenter of the program “Espejo Público”, Antena3 tv): “Well, let's talk about health, as every Thursday, you know we have here “Objetivo bienestar” ("Well-being"), and, today, we focus on our diet. Eating well is not only necessary to maintain a healthy weight, but also helps us to have an iron health and be more long-lived. "Eat well, live longer and better," is the motto of Dr. Escribano, is the motto and also the title of his book. Are we what we eat, Doctor?, good morning”

Dr. Escribano: “It was told……, good morning, good morning, good morning .... by Hippocrates, more than two thousand years ago ..... and still in force”.

Susanna Griso: “Up to what point affects our mood what we eat?”

Dr. Escribano: “It affects everything, because few people know the fact that a person, in its life, eats 60,000 kilos of food, and 100,000 litres of water; 100,000 litres of water come in and go out; but 60,000 remain and how these 60,000 are....-- first 60 are chosen ..., not 84; and second, that if they choose well, it depends health, it depends longevity, it depends on mood, depend thousand things, far more than previously you thought, even ten years ago, and of course 20 or 30 ago”

Cristina Fernández (journalist): “With what food the stress is corrected, these days, with the current political situation, when everybody is so stressed, above all them?; What politicians must eat, these days, with so much stress?........... Foods that give you stress and others that removed you”

Dr. Escribano: “Yes .. well ... one thing that gives a lot of stress is to eat a lot ..., eat lots is complicated ..., eating little is very interesting, and, after little, well .... What is well?, well is to eat for example the four jewels, I put.., five jewels, that I always put in food ....... I think that should have a section of jewelry, in supermarkets, and there should be: fruits, vegetables, nuts, olive oil and water. Well, this is added some fish, some meat, no more than five eggs a week, no less than three, and some forceful carbohydrates (pasta, rice, etc.) and you make a combination”

 Cristina Fernández: “No sweet”

Dr. Escribano: “No”

Susanna Griso: “And what must we not eat?, we have stayed with the "crown jewels"”.

Dr. Escribano: “But, you have not to drink alcohol .....; alcohol is an assault on the body, I have said many times  --and moreover I have published it-- , if alcohol did not exist on this planet, the world would be better ...., alcohol only create disadvantages , inside and outside. And sweets are a real problem, because a Spanish, a century and a half ago, took d three kilos of sugar a year, now it takes 70 ...., 70; this creates a problem, that animals do not have, which is the diabetes, type two”

Another journalist: “Not even a little glass of wine?”

Dr. Escribano: “I do not like it....., I, personally ....,”

Susanna Griso: “And chocolate?, I go for sweet…, Chocolate?”

Dr. Escribano: “Chocolate is a nut ...; chocolate is cocoa and cocoa is a nut, Right? ... How much chocolate?, man, then 2 cm per day, not half a metre .......; but, what happens is that chocolate is very addictive and ...............”

Albert Castillón (Partner of the program “Espejo Público”): “Mr. Lee, who has some of the best Chinese restaurants, in the end, those who live 115 years are not here, are in Japan, Huh?”

Dr. Escribano: “And here…….., here, here we fight with Japan, in terms of longevity, because we have a diet somewhat similar, as for fish, which is a very interesting element;  Japanese eat less than we do, in quantity, and that is fine, and then they have some very rough life parameters --in relation to family, in relation to environment .....”

Susanna Griso: “We, Spanish women, are very long-lived, something we are doing well .....Huh?, something we are doing well ......”

Dr. Escribano: “Eighties ....”

Susanna Griso: “They laugh at me, because I am always with the same old story ........ Are there foods that promote sleep, that prevent insomnia, Doctor?”

Dr. Esccribano: “Yes..”

Susanna Griso: “I know it, I know it…What do you want to tell you?”

Dr. Escribano: “The first those with Tryptophan, because they generate Serotonin, a neurotransmitter that induces us to sleep, which are: nuts, Omega3, blue fish (mackerel), all that has Tryptophan, banana, dairies (milk) come in handy. But, the first to have sleep, sleep, sleep is having, Huh ?... that is very important ..; there are people who nap and, finally, do not go in ...; you can not go for sleep, you miss it, you have to let it come .... if you let it come and, especially, if you calm down yourself, in stress, it usually comes too well”

Susanna Griso: “Dr., you have spoken of milk; but you know that milk has "bad press" ....; suddenly, there are many people, who say that we should not drink cow's milk ... What do you think about?”

Dr. Escribano: “It has .., it has bad press .... We spend eight thousand years drinking cow's milk”

Albert Castillón: “Yes, but we are the only one mammal, that drinks milk from another mammal, which is not his”

Dr. Escribano: “I smile, because they make me that question ten times, each week”

Susanna Griso: “Answer”

Dr. Escribano: “We do not take milk, as mammals, we do not take breast milk, we drink milk, like an animal product…. milk as sirloin ... for us ... it is an animal product and eight thousand years ago, we started to drink milk .., we mutated and produce lactase ....-- ... not all human ..., in Spain, 30 percent do not; in Sweden, practically everyone tolerate lactose; in central Africa, almost none, because it is an evolution ..., this is very simple”

Another journalist: “Doctor, alcohol, tobacco and obesity .... 10 percent of the international GDP (Gross Domestic Product) and what they spend, in the State coffers, for those diseases……”

Dr. Escribano: “Well, that is incredible”

Another journalist: “Is there a miraculous formula, after excluding these items?”

Dr. Escribano: “The miraculous formula is to be clever, when living and care; and to take care of yourself means get rid of things, that hurt us, and introduce things that are well for us -- in the book, I have introduced seventeen things, that I consider to be the team that you have to get, to defend tackles, with studs, which life gives you, once in a while, Right?”

Susanna Griso: “That are a few…”

Dr. Escribano: “That are a few…..So, if you have the fit team, well. There are things you have never invite them: tobacco, alcohol, obesity, and there are things you have to enter, such as personality --which there I describe it ... of course if you have personality, do not influence anything. ..True?”.

Susanna Griso: “Well .... those seventeen recommendations, to strengthen the football team, that we all have inside, are there .... "Eat well, live longer and better". Doctor .... a pleasure”

Dr. Escribano: “Thank you very much”
