You sure you know that one of the most popular dishes, from the Spanish cuisine, is famous –a famous dish, especially in eastern Spain--. The paella is a dry rice, because the broth evaporates or rice soaks the broth up--. But, today, I want to talk to you about the opposite to paella dish: soupy rice --which is a rice with a lot of tbroth and it is eaten with a spoon, instead of a fork--.
Now, I am going to give you the recipe for this dish, that you can cook in two different containers: a saucepan or a clay casserole.
The Ingredients are: 300 grams of rice. 250 grams of cockles. 250 grams of big prawns. 150 grams of peas. 1 tablespoon with olive oil. Parsley. 1 litre of fish broth. 2 glasses of water. Sea salt.
And, for the fried sauce, the Ingredients are: 4 tablespoons with olive oil. 2 cloves of garlic. 1 onion. 1 leek. 1 carrot. 2 ripe tomatoes. ½ red pepper.
And, for cooking it, you have to do the following: First, put the cockles in a bowl, add a handful of sea salt and cover them well, with cold water and leave it for half an hour; after this time, wash it well under the stream of the water tap and set aside.
Then, peel the large prawns, reserving bodies and put, in a saucepan, the shells and heads, with 1 and 1/2 glasses of water. Boil for 5 minutes. Grind in a blender, strain the liquid and reserve.
Then, put, in a pan, the ingredients for the fried and fry lightly, until it is tender, from 6 to 8 minutes, and grind, in a blender, with a little bit broth.
Pour the fried sauce, in the pan, with a tablespoon of oil. When hot, add the rice and the peas, stir with a wooden spoon, and fry lightly, about 5 minutes.
Heat the brothes and incorporate them to the pan, along with salt. Let boil, until the rice is done; it will take from 20 to 30 minutes, the time depends on the type of rice.
When it is about 10 minutes away, add the bodies of the large prawns and cockles, well washed. If it needs more water, add it, it must be soupy.
