Welcome to the forum, and the very best to you with your place on Corvera. My wife and I have an apartment in Phase 1, and love it out there - only problem is not being able to get out there enough!
I am sure there are others who can offer more better/ advice but here are a few of the places we have been to that we liked:
Banos y Mendigo - (its about 5 mins drive from Corvera village, there's a sign-posted right turn going back towards the motorway) there is a restaurant/ motel in the village square which is very good value. Its clean, well-run and very Spanish. Very good 'menu del dia' (3 course lunch with coffee for around €9) and good at night also.
Rincon del Pepe, Murcia City Centre - we haven't been there yet but a number of other Corverans have spoken very highly of it. You might need to book at weekends I'd say.
Las Pepinas, Corvera village - we have been here a few times. It is good value for 'menu del dia' and very clean inside. Looks like a burger joint from the outside but the food is fairly good.
Kema 2, Corvera village - this place looks like a pub/ nightclub from the outside but inside it is more like a cafe! Food is fairly good and very good value. I have seen another Corveran raving about the coffee here also.
El Cojo, Corvera village - this is on the right as you drive into Corvera village, with green signs outside. We went there once and will not be back. Overcharged for very average food, and the hygiene was poor!
Airemar, on the C3319 coming from the San Javier (opposite Murcia Furniture) - this is good too. Very good value 'menu del dia', bright and airy inside, very Spanish. Always busy at lunchtime which is a good sign!
I recommend you bring a guide book which has a food translations section in so you can order off the Spanish menu (some of them have English translations but they can be a bit weird e.g. 'Lamb's knee to the oven' and 'Crumbs' being two items that I remember!
I am sure if you were in Murcia city centre wandering around you'll find loads of good places to eat also. Best of luck!
