If like me, you like trying different recipes out, I thought it would be a good idea for all you budding cooks out there to share your favourite dishes etc.
It could be a starter, main course, pudding, drink, cocktail, anything. So come on start sharing.
Here's mine
Russian potato and pink radish salad
Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients
400g/14oz baby potatoes, washed
bunch spring onions, washed, trimmed and sliced
2 gherkins, finely sliced
10 pink radishes, washed and sliced thinly
small bunch of dill, washed and chopped finely
For the homemade mayonnaise
1 large free-range egg yolk
½ tsp lemon juice
vegetable oil
salt and freshly ground pepper
For the Russian dressing
100g/3½oz homemade mayonnaise
1 tsp Worcestershire sauce
1 tsp ketchup
1 tsp horseradish cream
½ tsp mustard
salt and freshly ground pepper
Method
1. Cook the potatoes in boiling salted water and until tender - about 10 to 15 minutes.
2. While the potato is cooking, make the mayonnaise. Place the egg yolk in a mixing bowl with the lemon juice. Gradually whisk in the vegetable oil in a slow stream until the mixture reaches the correct consistency. Set aside.
2. Drain the potatoes, and when cool enough to handle, slice thinly. Place in a large bowl and add the spring onions, gherkins and radishes.
3. Mix all the dressing ingredients together in a small bowl and pour over the potato salad. Sprinkle with the dill and add the mayonaise, and mix gently. Season to taste with salt and freshly ground black pepper. Refrigerate and serve chilled.
