I drove to the Centro Commercial in Murcia - where Ikea is and everything - absolutely every shop/supermarket - was closed. Food outlets were the only thing open. I was in the La Manga area in April, however, and seem to recall that the very large shopping centre in Cartagena (Parco Mediterranean) was open. It has a humumgus Carrefour, Leroy Merlin etc. I cannot, however, be 100 percent sure about this though but I am as certain as I can be that there was a significant amount of stores open there.

Take care with some of the retail centres. They tend to be open for restaurant sales only. Most shops including large supermarkets are closed Sundays apart from in August.
Do not take this as the gospel truth but I think I have read somewhere that shops are only allowed to open for a certain number of Sundays per year.
I have lived here for almost 4 years now and NEVER go on Sundays even when they are open if I can avoid it as the places are "thronged" as they say in Barnsley.
