Hello everyone.
Does anyone know if flying from Barcelona to the Canaries, that you have to quarantine there on arrival from Spain?

There's no quarantine anywhere in Spain.
When are you going? Would the restriction on entering or leaving Catalonia not apply at the moment?

There are restrictions travelling from one autonomous region to another. However there are no restrictions of flying/entering the Canaries from mainland Spain. You will however be required to have taken a covid test (result negative) no longer than 72 hours prior to arrival in the Canaries. These are the conditions at the moment. It's anyones guess what will happen after the present restrictions end after 09 Nov..
