We were a bit like you wondering what to get when you don't even know what furniture. Why there are so many lights for the apartment god knows, (i guess the Spanish must be afraid of the dark!!)
We also looked at recess spots but for the reason you mentioned decided not to go for them. After much looking around we decided to get our lights from Leroy Merlin on the same retail park as IKEA. For the kitchen, outside of bathroom, main bathroom light, and living room light we have gone for the lights that fit close to the ceiling. For the other bathroom light we have bought a spotlight which should (hopefully) provide a light over where the bathroom mirror will go. For the dining room we have gone for a t-bar type light fitting with 3 lights attached to it, and for the terrace we have chosen quite plain straightforward lights in a plastic housing unit. As yet we haven't got any lights for the bedrooms partly due to running out of time, and partly due to not being able to find something we liked given that there are 2 fittings in the rooms. It would have been far easier to decide if there was only 1 fitting. We will get these on our next trip out in December.
One of the reasons we completed when we were over was that we could buy things like the lights and put them in the wardrobe, and then get them fitted before we are out next (a guy recommended by Carol is doing it for us next week) If you want his number drop me a PM. This way we should be able to use the apartment in December and not need candles (assuming we get the builders electric turned on).

P.S. The lights and lamps we have bought for the living room and dinning room all match each other. I found it extremely difficult buying lights for empty rooms and these were one of the last things we bought. Don't envy you, your forthcoming task, its a pain in the neck (literally)
