      Today, I would like to tell, you, a well-known saying in Spain, which reads as follows: "Al pie del cañón" = "Ready for whatever may come".

     This saying means staying, tirelessly, that --labor care, occupation,. deber--, which is entrusted. Thus, Agustina de Aragon, the legendary female from the site of Zaragoza, who cared, undaunted, giving fire, the guns of Defense, twice came to meet this adverbial. "Let´s see!. There was so much need, willy-nilly, I had to stand ready for whatever may come.".

        Today, I should like to talk you about an important news: “A Spanish company invent a glasses for blind people”. I think that it is a very important advance, in order that this people do not need the help by a cane or a guide dog.

      The Spanish company “Quality Objects”  has created a prototype augmented reality glasses for people with blindness or low visibility that turn obstacles into "three-dimensional sound", with which its creators (Antonio Quesada and Miguel Benages, Director of the ONCE –Organizacion Nacional de Ciegos de España = National Organization of the Blind of Spain--) intend to supplement or even "replace" other methods of support, as cane or guide dog, as explained by the company responsible for the invention.

      Thus, new glasses 'Retriever', connected to a smartphone with Android operating system, emit sounds to different tones and different frequencies, to warn the wearer of the situation of the obstacles and the distance, at which they are located. To do this, the lenses include sensors similar to those, used by modern cars to help park, through a "three-dimensional sound image", and incorporate gyroscope, compass and GPS, to guide blind people.

      In this way, the new device will be able not only to guide the person, to a specific location, but also to detect furniture and stairs, avoid branches at head height, avoid obstacles, as lampposts or trees, and walk parallel to a wall, "similarly to the way a bat in the dark", as indicated by the Director of “Quality Objects”, César Carralero, who has indicated that it will be necessary for users to receive "a simple hand training from professionals".

      In addition, he explained that the model will incorporate an emergency button, to connect to a service of assistance and rescue, if necessary, and it could prove "very useful", for the elderly, as they have indicated.

      Its creators hope to start marketing the virtual reality glasses, from next May, for a price, as they have announced, "it will not exceed 200 euros", through specialized vision centres.

      Yesterday, a friend of mine told me that a new beer was made, here in Algeciras. Its name is “Levantera” and , now , I am going to explain you the reason of this name.

      The history tells that, back in the seventeenth century and, above all, the XVIII, Algeciras gained some fame, because, in their land, were cultivated vineyards, that gave wines of excellent quality, to the point that exported, by sea, to Flanders, England, France and many parts of Spain. This burgeoning viticulture activity was driven by the excellent wines, that were removed from vines, which gave some peculiarity of the winds lashing. It is said that they were called “special”. Now, three centuries later, there are not wines, but its place is being occupied by a handmade beer, which has been baptized with the name, that here, is precisely given to the characteristic east wind, blowing with special virulence the day when you have decided to go to the beach. “Levantera” is an author beer, with a firm from Algeciras, “especial” as the nickname of the people, whom it is addressed; but, also, with a clear regional vocation.

      The rubric is put by Manuel Martin, a businessman wine distribution, who appreciated the rise of handmade beer and wanted to launch a land, with which the region was identified. Manuel told the following: "After deciding to develop our own handmade beer, to analyze consumer behavior and new trends, in the market, and to detect more and more handmade beer consumed, in relation to industrial, still in time of crisis, but products are demanded more exclusive". A beer from here, for people from here. You can say that it is on the right track. A year after undertaking the complicated challenge, you can buy or take ”Levantera”, in about fifty establishments. Its driver, the owner of the recipe, is going to establish the factory in the region (now he has to make it in the province of Sevilla, 1,000 liters, 3,000 little bottles, each time) and intends to continue being introduced, with new types  --now, there is blond, toast and black, but there is in project, for example, a Mexican-- and more points of sale. Now, it can be found in Algeciras, La Linea, Los Barrios, San Roque Station, Palmones, Guadacorte, Tarifa, Sotogrande and San Roque village.

      Manuel Martin dealed (and deals) with wine distribution, in the region, and, some years ago, he realised the incipient rise of gin and tonic. He began to sell, in the region, premium gin, until the market experienced an explosion unparalleled and the competition grew to overtake it. When he realised the interest that began to awaken handmade beers, he said he would not fall into the same mistake. It would not still be good to start bringing other brands, in order that, when the market grew, he left behind himself again. Then, it came to his mind: "If the recipe and brand is mine, nobody can take it away from me", he thought. And no sooner said than done. With the help of a brewer master and the advantage given by his years of experience and contacts with the hospitality, he devised “Levantera”. A beer for the region, that has been very well received, although Martin expects that it still rootes more on people, who bet more, for a local product, that strives for excellence and is constantly evolving. Because, one of the virtues, of this type of beer, is its versatility. There are plenty of flavours, colors, aromas, that vary during the preparation and causing fans have become genuine jewelry hunters.       Initially "Levantera" is presented, in 33cl format. The price is about 2 € and they come in boxes of 12 units. In the labeled, you can read the logo, with a kind of moved letter, giving the feeling of wind and sea waves background a silhouette of the Rock of Gibraltar.

       The beer of the region contains water, yeast, barley, hops and point. That is, there is no additive, it is unpasteurized and carbonless added, it suffices that arising from the second fermentation in the bottle, resulting in a completely natural product. The fermentation, in bottle, makes it sometimes may contain turbidity or natural sediment.

      First, there was the blonde, fresher, less dense, with which searches the customer accustom the palate this type of drink, which, in Spain, is just conforming to the point that many experts speculate that, eventually, it shall replace the other alcoholic drinks; and the poor sister of wine shall cease to be it.

      The boom began, in the USA, where eight out of every hundred beers are handmade. From there, it came to Europe and, then, begins to enter Spain, with enormous force. There are already more than 150 brands, in the country, where there is no specific regulation, except health control, that any drink, that is sold, is subjected.       The blonde of “Levantera” is the bridge product to the star of the home: the toast. From there to the black, with a kind of double roasting, that makes it less dense than the industrial standard of the major brands.

      There is a special edition commemorating the centennial of Algeciras CF, that may become one of the modalities of the home.

      The “Levantera” beer was presented, the last November-13 – 2014, in the restaurant “Cepas”, in “Getares” beach, in Algeciras.

         This fact shows that this beer, which was born in the social networks, is being accepted by people, through bares and restaurants.

        Today, I should like to talk you about three special abandoned villages, in the Southern Spain: Las Algamitas, La Dehesilla de Algar and El Bercial. They are in the province of Cádiz.

      The Algamitas, founded by the Túrdulos, an Iberian tribe based in the province of Cadiz. Although it appears that was initially a hostelry of passage for travelers, during Roman times, and already, in the Muslim period, is when several neighbors settled around, creating a village, calling it “Algameca”.

      After the reconquest, King Henry IV granted this land to knight Mr. Rodrigo de Rivera, was later sold by the son, Mr. Pedro de Rivera, the Marquis of Cadiz, to Mr. Rodrigo Ponce de León, on September -23 -1482, for 4,000.000 of maravedíes, until the abolition of the 'jurisdictional lordships' of the nineteenth century, it made the queen Elizabeth II granted the Algámitas the 'title villa', on March - 27 - 1852.

      However, in 1855, this amall village was alienated by a disentailment and sold, in 1874, at public auction, with a starting price of 9,215 pesetas, finally sold for 60,035 pesetas, to Mr. Francisco Suarez Márquez, a native of Algeciras and neighbor of Casas Viejas, finishing of pay as it did three times, in 1881. Since then, it is considered a private farm and currently belongs to the municipality of Medina Sidonia.

      The second abandoned village is: Dehesilla de Algar. It is a village belonging to the municipality of Jerez de la Frontera and considered one of the rural districts of the city of Jerez. Now, virtually uninhabited, from which are only preserved a few remains of houses and stables for cattle farmers.

      The Dehesilla de Algar is very near to the Arroyo de los Alamos (The Stream of Poplar).It is to the north of the village, Algar, although La Dehesilla belongs to Jerez de la Frontera.

       The third abandoned village is: El Bercial, in Rota, which is now privately owned, with some simple remains of abandoned houses and warehouses.

        I have just found a very interesting news: “A virus `hidden´ in a cell demonstrating its safety in the treatment of childhood cancer”.

      A therapy, that uses a virus "hidden" in a cell, that makes "taxi", to take it to the tumor and destroy it, while stimulating the patient's immune system, has demonstrated its safety (lack of toxicity) in children with neuroblastoma , an aggressive childhood cancer.

        Infant Jesus Children's Hospital of Madrid is the only accredited for this cell therapy virus, which is possible thanks to the collaboration with the Institute of Health “Carlos III”.

      The treatment, known “Celyvir”, consists on mesenchymal cells (obtained from bone marrow), carrying genetically modified oncolytic virus, to the areas of the tumor, to destroy it, respecting healthy cells.

      “The strategy of "Trojan Horse" is used to "hide" the virus inside the cell”, said Dr. Javier Garcia Castro, from the Unit Cell Biotechnology at the Carlos III. "We use the intrinsic ability of cells, to reach the tumor for using it as a taxi", said the researcher.

      The body tends to attack the virus, that are detected and, in this case, the aim is that the virus travel, hidden in mesenchymal cells.

      Furthermore, it has been observed that "it is produced an effect called" to the immune system, that is stimulated and, indirectly, it can also attack the primary tumor and to metastases.

      The therapy, which is administered intravenously, has already been tested in a clinical phase I trial, in which have participated 10 children and 10 adults, with refractory solid tumors, which has been proven safe, although the clinical outcomes will not be made public until the end of the year.

      The beginnings of this research go back ten years ago and, since then, the therapy has been tried as compassionate use, in 20 children, mainly with neuroblastoma, the most common childhood solid tumor, after brain tumors. This cancer mortality is 40% and increases by 90%, in cases of relapse.

      The Dr. Manuel Ramirez Orellana, coordinator of the Research Laboratory of Onco-Hematology of the “Niño Jesus Hospital”, stressed that "have tried enough cases, to have an idea, that is the most important of our therapy: it is well tolerated by patients". In fact, he explained, “the maximum toxicity was transient fever ", which, in his view, is "a great news".

      The second "important" idea is that "it can offer benefits to patients", said Dr. Ramirez, who has stated that "we have also learned that, in order that there is benefit, the immune system has to react".

      Of the 20 children, treated in the compassionate use program, in one case the tumor was removed and, ten years later, it has not recurred; in other case, the disease also disappeared, but, after six months, there was a relapse; in a child, there was a stabilization, for two years, and, in three cases, they were obtained partial results.

      The research has advanced thanks to many factors, including the design of cancer virus, called ICOVIR- 5, conducted by the Dr. Ramon Alemany, from the Institute of Biomedical Research of Bellvige.

      The next step is to conduct a Phase II study, to demonstrate the efficacy, that probably will start next year, and the results will be gotten, two years later.

      The Dr. Ramirez has said that the drug will not be marketed, until five or six years, and it in case that the results, that researchers hope, are gotten and funding is achieved.

      Meanwhile, and until there is an open clinical trial, it will continue to administer as a compassionate use "but with a little more strict criteria".

        Today, I should like to show you the recipe of the Ratatouille, typical from Spain. We name it: “Pisto”, but, it is really named “Pisto manchego” (Pisto from La Mancha, in the centre of Spain).

      The ratatouille consists on a fry-up various vegetables of variable composition.

      The word “Pisto” comes from “Pistare”, that means “meat juice”. But, other authors think that it comes from Latin: “Pistus”, that means: “Crushed”.

      But the dish is transformed, with the progressive incorporation of tomato and pepper, to the Spanish cuisine.

      Formerly, the peasants of La Mancha used products from vegetable garden; but above all: red peppers, green peppers, tomatoes and some courgettes; but the vegetables used often vary greatly depending on the area, season and local tastes, etc. However, we can say that it always takes tomato and pepper and it is also often lead onion, garlic, courgette, etc. All these ingredients are prepared cut into small dice, no more than half a centimetre. You poach vegetables, in a pan, with olive oil and, when they are ready, let stand for half an hour.    

      You can use eggplant, instead of courgette. In Mallorca, that dish is named: “Tumbet”.

      In some parts of La Mancha, you can find ratatouille, with crushed garlic with cumin.

      Well, now I am going to give you the Ingredients of my recipe: 4 medium courgettes. 2 medium tomatoes. 1 red pepper. 1 green pepper. 2 medium onions. 200 grams of Serrano ham. Olive oil. Salt.

      For its preparation, you must do the following: Place the peppers, in a baking dish, sprinkle with salt and put oil. Then, you have to put the baking dish, in the oven, at 180 degrees Celsius and roast peppers from 20 to 30 minutes . When they are to the point, cover with a kitchen towel, to sweat. Peel them, slice them and remove the seeds. Then, cut the ham in small dice and keep all.

      Peel the onions and cut into rings.

      Peel the tomatoes and courgettes, remove the seeds and cut them into pieces.

      In a saucepan saute the onions over low heat, for 10 minutes. When browned, add the pepper and 4 minutes later, the courgettes and tomatoes. Add a little bit of salt.

      Moving, constantly, and let the vegetables end up doing. It will spend about 20 minutes.

      In a saucepan, over low heat, saute the ham until golden brown .. add to skillet. Cook for about 2 minutes.

      In the end, serve hot ratatouille.
